01 - 3.5 oz grated sharp cheddar cheese
02 - 1.75 oz grated Parmesan cheese
03 - 1 large egg, beaten (for egg wash)

04 - 1 sheet (8.8 oz) all-butter puff pastry, thawed if frozen
→ Spices & Seasoning
05 - 1/2 teaspoon smoked paprika
06 - 1/2 teaspoon dried oregano
07 - 1/4 teaspoon freshly ground black pepper
08 - 1/4 teaspoon chili flakes (optional)
09 - 1/4 teaspoon salt
# Directions:
01 - Set the oven to 400°F and line a baking tray with parchment paper.
02 - In a mixing bowl, blend the grated cheddar, Parmesan, smoked paprika, oregano, black pepper, chili flakes if using, and salt.
03 - Unroll the thawed puff pastry sheet onto a lightly floured surface and evenly distribute the cheese and spice mixture over it.
04 - Lightly use a rolling pin to press the cheese and spice blend into the pastry to ensure adherence.
05 - Using a sharp knife or pizza cutter, slice the pastry into 24 equal squares or rectangles.
06 - Place the cut pieces on the prepared tray with space between them and brush each top with the beaten egg.
07 - Bake in the preheated oven for 15 to 18 minutes until the pastry is puffed and golden brown.
08 - Transfer the baked bites to a wire rack and allow them to cool slightly prior to serving.
